Method for Determining Bromate Content in Flour, Bread, and Drinking Water Using Anyeep TQ9100

This study utilized the Anyeep TQ9100 triple quadrupole mass spectrometer from Anyeep Company to develop a method for detecting bromate in flour, bread, and drinking water. The method demonstrates excellent linearity, with detection limits and quantification limits meeting relevant standard requirements. Using this method and equipment enables the detection and quantification of bromate in food and drinking water.
Bromate is widely used as a baking additive in bread production, where it acts as a slow oxidizing agent. It also forms as a byproduct when natural water sources such as mineral water and spring water are disinfected with ozone.
However, bromate is classified as a Group 2B probable human carcinogen internationally. In Announcement No. 9 issued in 2005, the Ministry of Health mandated the discontinuation of potassium bromate as a flour treatment agent in wheat flour. The "GB 5749-2022 Standard for Hygiene of Drinking Water" requires that bromate levels in drinking water remain below 0.01mg/L.
This method employs ion chromatography-tandem mass spectrometry (IC-MS/MS). Sample pretreatment for wheat flour, bread, and drinking water follows GB/T 20188-2006, SN/T 3138-2012, and GB/T 5750.10-2023. Bromate content is quantified using the external standard method in accordance with GB/T 5750.10-2023.
